Broccoli, Chicken, and Pasta

Ingredients

  • 8 oz. dried whole grain pasta
  • 3 cups broccoli florets
  • 4 lbs, boneless/skinless chicken breasts
  • ¼ cup light mayonnaise
  • 1 tbsp. olive oil
  • 2 tbsp. Parmesan cheese
  • Salt and pepper to taste

 

Instructions

Cook the pasta according to the package directions and drain well. Return the pasta to the pan and set aside. Next, slice the chicken into thin strips and coat each piece lightly with garlic, salt, and pepper. In a large skillet, heat the oil over the medium heat for approximately 30 seconds and add the chicken. Allow this to cook for 3 to 4 minutes, or until the chicken is cooked thoroughly and is lightly browned. Add the cooked chicken to the drained pasta along with the broccoli. Stir in the mayonnaise as well. Cook over low heat, covered, until the dish is heated through and the broccoli has become tender. Top with Parmesan cheese.

 

Turkey and Spinach Pie

Ingredients

  • 4 oz. dried multigrain pasta
  • 3 eggs or the egg substitute equivalent
  • ½ cup light dairy sour cream
  • 2 cups of cooked turkey breast, sliced
  • 1 pkg. (10 oz) chopped spinach, thawed and drained
  • 1 cup reduced-fat cheese
  • 1pkg. reduced fat sour cream
  • 1/3 cup roasted red sweet pepper
  • 1 tbsp. dried basil
  • ¼ tsp. garlic powder
  • ¼ tsp. crushed red pepper
  • Cooking spray

 

Instructions

Begin by preheating the oven to 350 degrees F and coating a deep 9-inch pie plate with cooking spray. Next, cook the pasta according to the package directions and drain well. In a large bowl, beat the cream cheese with an electric mixer until smooth, and then gradually beat in the egg or egg substitute and the sour cream. Stir in the garlic powder, basil, and crushed red pepper.

Add the pasta to the cream cheese mixture, along with the turkey, spinach, cheese, and roasted red pepper. Spread this mixture into the pie plate and bake, uncovered for 45 to 50 minutes, or until the center is heated through. Allow the dish to cool for at least 10 minutes before slicing and serving.
