Basic Sugar Free Diabetes Ice Cream

Ingredients

  • 5 eggs
  • 2 pkg. instant sugar free pudding
  • 2 cans evaporated milk
  • 12-18 packets Equal
  • 1 ½ tbsp. vanilla

 

Instructions

Blend together all of the ingredients and freeze. You can change the flavor of your ice cream by changing the flavor of the pudding you use.

Note: You can also use different types of fruits to add or change the flavor. Remember that fruit does contain sugar however, so you need to take the glycemic index of the ingredients that you add into account.

 

Chocolate Sugar Free Ice Cream

Ingredients

  • 1 pkg. (1.5 oz.) sugar-free instant chocolate pudding mix
  • 4 cups evaporated milk
  • 6 packets artificial sweetener
  • 4 oz. light frozen whipped topping, thawed
  • 2 tbsp. baking cocoa
  • 1 tsp. vanilla extract

 

Instructions

Use a blender to combine the pudding mix, cocoa, milk, vanilla, and sweetener, processing on low. Continue until the mixture is smooth, and then fold in the whipped topping. Pour the mixture into a shallow 2-quart container. Freeze for 30 minutes and then stir with a wire risk. Return to the freezer until at desired consistency and serve.

 

Homemade Strawberry Ice Cream

Ingredients

  • 3 cups nonfat dry milk powder
  • 3 cups skim milk
  • 6 tbsp. light butter, melted
  • 1 cup boiling water
  • 4 cans sugar-free strawberry soft drink
  • 16 oz. frozen strawberries, sliced
  • 24 packages of Equal
  • 1 small pkg. NutraSweet vanilla pudding mix

 

Instructions

Use a blender to blend together the dry milk, water, butter, and Equal. Pour the mixture into an ice cream freezer container. Next, stir in the pudding slowly, followed by the soft drinks in the same manner. Add the strawberries, mix, and then add the milk to the fill line. Freeze the mixture before serving.
