Easy Diabetic Ice Cream

Ingredients

  • 4 eggs
  • 1 large can of evaporated milk
  • 1 ½ cup Sprinkle Sweet (or other sugar substitute equivalent)
  • 1 package of sugar free vanilla Jello pudding
  • 1 package light whipped cream
  • 1 tbsp. vanilla

 

Instructions

Begin by whipping the topping according to the package directions. Combine all of the ingredients, mix well, and pour into a 1 gallon ice cream freezer.

 

Grilled Strawberry Sandwich

Ingredients

  • 1 cup strawberries, sliced
  • 1 whole-wheat pita bread
  • 3 tbsp. low fat cream cheese
  • Cooking spray

 

Instructions

Begin by allowing the cream cheese to soften. Next, combine the cream cheese with ¼ cup of strawberries, mashing the berries as you make the mixture. Cut the pita bread in half, open the pocket gently, and spread half of the cream cheese/strawberry mixture inside each half of the pita. Then, fill with the remaining strawberries. Next, warm a skillet or cast iron pan and coat with a cooking spray. Grill both sites of each half of the pita until they are a golden brown. For best results, eat warm.

 

Cheesecake Lemon Bars

Ingredients

  • 2 (8 oz) packages low-fat cream cheese
  • 1 (3 oz) package sugar-free lemon gelatin
  • 1 cup water
  • 2 tbsp. lemon juice

 

Instructions

To begin, bring in the water to a boil and then stir in the box of Jello. Stir this for approximately 2 minutes. Next, add the lemon juice and cream cheese, mixing until all the lumps disappear. Pour this mixture into an 8” square pan and chill to set. After it has set, cut into 8 square pieces.
