  • 1 frozen pie crust (9 in.)
  • 16 oz. canned solid pack pumpkin
  • 3 eggs
  • ¾ cup No Calorie Sweetener
  • 12 oz. evaporated milk
  • 1 tsp. vanilla extract
  • 1 tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • ¼ tsp. ground ginger
  • ½ tsp. salt
  • 10 tbsp. whipped cream topping

 

Instructions:

Begin by preheating the oven to 400 degrees F. Using a medium bowl, mix together the pumpkin, eggs, and evaporated milk (an electric blender works the best). When the mixture is well-blended, add the artificial sweetener, vanilla, ginger, nutmeg, and cinnamon and blend once again. Pour the filling into your pie shell and spread evenly. Bake for 35 minutes or until you can stick a toothpick in the middle of the pie and it comes out clean. Cool the pie on a wire rack, top with the whipped cream topping (if desired) and serve warm.

 

Fruit Sweetened Pumpkin Pie

Ingredients:

  • 1 frozen pie crust (9 in.)
  • 1 ¾ cups of canned pumpkin (or freshly mashed)
  • 3 eggs
  • 1 ½ cups of evaporated skim milk
  • 1/3 cup of thawed apple juice
  • 1/3 cup of granulated fructose
  • 2 tsp. ginger
  • 2 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. salt
  • ¼ tsp. cloves

 

Instructions:

To make the fruit sweetener, mix together the apple juice concentrate and the granulated fructose. This is a healthy way to add sugar to many diabetic recipes. Now, preheat the oven to 350 degrees F. Then combine all of the ingredients and beat for 2 minutes on low with electric mixer. When done, pour the mixture into the pie crust. Allow the pie to bake for 30 minutes or until you can insert a toothpick in the middle and it comes out clean. Allow to cool before serving.
