  • ¼ cup sweetened coconut flakes

Instructions

Preheat the oven to 400 degrees. Pour the flour, coconut, sugar, baking powder, and salt into a large mixing bowl and stir until the mixture is thoroughly combined. In a separate, smaller bowl, combine the yogurt, egg, egg white, coconut extract, and oil. Slowly add this mixture to the flour mixture. Coat a muffin pan with cooking spray and pour the batter into each cup until it is 2/3 of the way full. Bake the muffins for approximately 20 minutes, or until they are a golden brown.

 

Diabetic Cornbread

Ingredients

  • 1 pkg. (6.6 oz) of corn muffin bread mix
  • ½ cup fat-free milk
  • ¼ cup egg substitute
  • Cooking spray

 

Instructions

Preheat the oven to 425 degrees F. Then, in a large mixing bowl add all of the ingredients and mix until moist. Coat an 8” baking pan with cooking spray, pour the batter into the dish, and bake until the bread is a light brown (approx. 15 minutes).
