Diabetic Jalapeno Burgers

Ingredients

  • 2 jalapeno peppers, finely chopped and seeded
  • 1 lb. extra-lean ground beef
  • 6 whole-grain dinner rolls
  • 3 slices pepper Jack cheese, halved
  • 6 tbsp. salsa
  • 6 tbsp. fat-free sour cream
  • 6 tbsp. lettuce, shredded
  • 2 tbsp. fresh cilantro
  • 2 tbsp. water
  • 2 dashes of Louisiana Hot Sauce
  • 2 garlic cloves, minced
  • ¼ tsp. cayenne pepper
  • ¼ tsp. black pepper
  • ¼ tsp. salt
  • Cooking spray

 

Instructions

Use a large bowl to combine the beef, jalapenos, cilantro, water, hot sauce, garlic, pepper, salt, and cayenne pepper. Work the meat until the mixture is well combined, and then shape into six patties. Coat the grill rack with cooking spray, and then grill the burgers, covered, over medium heat for 3 minutes on each side. Continue to cook until the juices run clear and then set them on a plate with a paper towel. Immediately top them with the cheese so that it melts on the patties. Creamy Pasta and Shrimp

Ingredients

  • 12 oz. raw shrimp, peeled and drained
  • 6 oz. whole-wheat spaghetti
  • 1 ½ cup low-fat yogurt
  • 1 cup peas
  • 1 bunch asparagus, thinly sliced and trimmed
  • 1 large bell pepper, thinly sliced
  • ¼ cup chopped parsley
  • ¼ cup toasted pine nuts
  • 3 garlic cloves, minced
  • 3 tbsp. lemon juice
  • 1 tbsp. extra-virgin olive oil
  • ½ tsp. black pepper
  • 1 ¼ tsp. sea salt

 

Instructions

Begin by cooking the spaghetti according to package directions, except 2 minutes before it would normally be done, add the shrimp, asparagus, bell pepper slices, and peas. Cook this for mixture for 4 minutes or until the shrimp are thoroughly cooked. Drain the mixture and set aside. In a large bowl mash together the garlic and salt, and then whisk in the yogurt. After mixing well, whisk in the oil, lemon juice, parsley, and pepper as well. Add the spice mixture to the pasta mixture and toss thoroughly to coat. Garnish with the pine nuts upon serving.
