  • 16 oz. boneless/skinless chicken breast
  • 2/3 cup lemon juice
  • 3 tbsp. black pepper
  • 2 tbsp. grapeseed oil
  • 1tsp. rosemary

 

Instructions

Excluding the chicken, combine all of the ingredients to make a marinade. Pour this over the chicken and allow this to marinate in the refrigerator for at least 3 hours. Afterwards, roast the chicken at 425 degrees F for one hour.  You may also grill the chicken for 20 minutes, turning after 10.

Apple Pecan Chicken Roll-ups

Ingredients

  • 4 boneless/skinless chicken breasts
  • ½ cup instant brown rice
  • ½ cup finely-chopped unpeeled apple
  • ½ cup apple juice
  • ¼ cup chopped pecans
  • 1 tbsp. vegetable oil
  • 3 tbsp. sliced green onions

 

Instructions

Begin by heating the oven to 400 degrees. Using a medium skillet, heat the oil over medium-high heat. Cook the chicken for 4 to 5 minutes, or until it is likely browned, and then place the shallow baking pan. Bake the chicken for 20 to 25 minutes in the oven.

Meanwhile, bring the apple juice to a boil in a small saucepan. Add the rice, cover, and then reduce the heat. Simmer this for 8 to 10 minutes or until all of the liquid is absorbed. Ingredients

  • 1 lb. chicken, shredded
  • 2 cups diced tomato
  • 1 ½ cup reduced fat cheddar cheese
  • 1 cup diced tomato
  • 1 cup water
  • 3/4 cup nonfat sour cream
  • ¾ chopped onion
  • 1 pkg. taco seasoning
  • 1 pkg. taco shells
  • Cooking spray

 

Instructions

Preheat the oven to 350 degrees, and then coat a cookie sheet with cooking spray. Place the taco shells on the cookie sheet. Bake the taco shells for 5 to 7 minutes. Next, bring 1 cup water to a boil and mix in the taco seasoning. Add the chicken and simmer for 10 to 15 minutes. The chicken should absorb most of the liquid. Place the chicken mixture into each shell. Top each with 2 tbsp. of cheddar cheese and 1 tbsp. of sour cream. Add some shredded lettuce, diced tomato, and the chopped onion to each. Serve.
