Sugarless Banana Bread

Ingredients

  • 2/3 cup low-fat spread
  • 2 cups whole-wheat flour
  • 2 eggs, beaten
  • 3 extra-ripe bananas
  • 3 tbsp. unsweetened coconut milk
  • 1 tsp. baking soda

 

 Instructions

Begin by preheating the oven to 350 degrees F and grease a 9×5” loaf pan with a small portion of the spread, leaving about ½ cup of the spread. Now cream the remaining portion of the spread in a bowl until it is fluffy. Next, sift the baking soda with the flour, and then add the dry ingredients to the creamed low-fat spreads a little at a time, alternating with the eggs.

Place the peeled bananas in a medium sized bowl and mash them well. Stir them into the cake mixture and mix in the coconut milk as well. After the batter is smooth, spoon it into the loaf pan and level the surface. Bake for 1 hour and 25 minutes; when done you should be able to insert a skewer in the center and it comes out clean. Cool on a wire rack and serve in slices.

Ingredients

  • 1 ½ cups flour
  • ¼ cup light margarine
  • ½ cup sugar
  • 1 egg
  • 1 cup bran cereal
  • ½ cup chopped walnuts
  • 1 tsp. vanilla extract
  • 2 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • Light cooking spray

Preheat oven to 350 degrees F and cream the margarine and sugar. Add the egg and the vanilla next and beat the mixture well. Stir the uncooked oat bran cereal in as well. Stir together all of the other dry ingredients and add it to the batter, alternating with the bananas and mixing well each time. Stir in the nuts and then turn into a 9×5” loaf pan coated with cooking spray. Bake for 55 to 60 minutes. Insert a skewer into the center; when it comes out clean it’s done. Remove from the pan and allow to cool on a rack before slicing.
