Diabetes Jam Recipes

 

Strawberry Diabetes Jam

Ingredients

  • 4 cups strawberries, halved
  • ½ cup white grape juice, concentrated
  • 2 ½ tbsp. lemon juice
  • 1 1/2 tbsp. unflavored gelatin
  • ¼ tsp. grated lemon rind

 

Instructions

Begin by placing the juices, strawberries, and lemon rind in a medium sauce pans, mashing down the strawberries slightly in order to release the juice. Heat the mixture to a boil and sprinkle the gelatin over the hot mixture. Stir well so the gelatin dissolves. Afterwards, remove from heat, skim the mixture, and ensure that the jars and lids are as warm as the jam when you place the mixture inside. Allow to cool to room temperature before sealing the jars and freezing the diabetes jam.

 

Peach Diabetes Jam

Ingredients

  • 4 large peaches
  • 4 packets Equal
  • 1 cup water
  • 1 pkg. gelatin, unflavored
  • ¼ tsp. salt

 

Instructions

Take to large peaches and cut them into small peace, and then mash up the other two peaches. Put these in a small pan with ½ cup of water and bring the mixture to a boil. Allow this to boil for 1 minute and then allow the mixture to cool. Stir in the 4 packets of Equal. Now, in another pan, heat ½ cup of water to a boil. When at a boil, stir in one package of unflavored gelatin until it dissolves. Add the salt and stir in as well. Pour the gelatin mixture over the fruit and mix in well. Pour into warm sterilized jars and refrigerate. This mixture takes one hour to set.
