Healthy diabetes snacks usually include foods such as fruits and raw vegetables, but they don’t have to be limited to those. The important thing to remember when choosing healthy diabetes snacks is to find snacks that are not packed with calories and carbohydrates. You also have to understand that if you eat many snacks, you have to cut down in how much food you eat in your regular meals. You also cannot snack too often. The American Diabetes Association (ADA) states that even healthy diabetic snacks can be unhealthy if you eat too many of them.

 

Recipes for Healthy Diabetes Snacks

 

Baked Kale Chips

Ingredients

  • 1 tbsp. kale
  • 2 tsp. seasoned salt
  • 1 bunch kale

 

Instructions

Begin by preheating the oven to 350 degrees F and lining a cookie sheet with parchment paper. Use a knife to remove the leaves for the stems. Tear into the rest into bite-sized pieces. Wash thoroughly and dry the kale. Drizzle with olive oil and sprinkle with seasoning salt. Bake until the edges are brown (approximately 10-15 minutes).

 

Pizza Sandwiches

Ingredients

  • 4 slices of mozzarella cheese
  • 1 (8 oz.) pkg. refrigerated crescent rolls
  • 4 tsp. tomato paste
  • ½ tsp. dried oregano
  • Cooking spray

 

Instructions

Preheat the oven to 350 degrees F. Next, unwind the rolled dough and separate into 4 rectangles. Spray a 9×13 inch baking sheet with cooking spray and place 2 rectangles on the tray. Moisten the edges of these rectangles with tomato paste and place 3 slices mozzarella slices on each rectangle. Top each with sprinkle each with ¼ tsp. of oregano. Cover each with the remaining dough. Press the edges with a fork to seal. Bake this for 10 to 12 minutes or until each becomes a golden brown.

 

Tasty Diabetic Trail Mix

Ingredients

  • 1 oz whole shelled almonds
  • ½ oz. dry roasted peanuts
  • ½ oz. cranberries
  • 2 tbsp. chopped dates, pitted
  • 3 tsp. chocolate chips

 

Instructions

Combine all the ingredients in a medium small bowl.

 

Spinach Dip

Ingredients

  • 6 oz. baby spinach
  • 1 5 oz. can water chestnuts
  • 1 sm. shallot peeled
  • ½ cup low-fat cottage cheese
  • ½ cup reduced-fat cream cheese
  • ¼ cup nonfat yogurt, plain
  • 2 tbsp. fresh chives
  • 1 tbsp. lemon juice
  • ½ tbsp. lemon juice
  • ½ tsp. salt
  • Black pepper to taste

 

Instructions

Pulse the water chestnuts and shallot in the food processor until they are coarsely chopped. Next, add in the cottage cheese, cream cheese, yogurt, lemon juice, salt and pepper. Pulse until they are well-combined. Finally, add in the spinach and chives until they are fully combined as well.
