Ingredients

  • 2/3 cup nonfat dry milk powder
  • ¼ cup water
  • 2 tbsp. peanut butter
  • 2 tsp. unsweetened cocoa
  • 1 ½ oz wheat flake cereal
  • 5 tsp. sugar substitute
  • 2 tbsp. raisins
  • Cooking spray

 

Instructions

Using a small bowl combine the first four ingredients and mix until well blended. Afterwards, mix in the cereal and raisins. Coat a 4X8 inch pan with cooking spray and then press the mixture to the bottom of the pan. Chill this for 30 minutes, and then it will be ready to cut into bars and serve.

 

Diabetic Friendly Nachos

Ingredients

  • ½ cup nacho cheese soup
  • 20-30 large corn chips
  • 1 tbsp. chopped pimento
  • 2 tbsp. water
  • 1 tsp. Worcestershire sauce

 

Instructions

In a microwave-safe bowl, stir together the cheese soup, water, and Worcestershire sauce. Cover this mixture with lightly with wax paper and cook on high for 1 minute, stirring every 30 seconds. Next, place the chips on a microwavable plate and then pour the cheese mixture on top. Cook this, uncovered for an additional 30 seconds. Top the plate with the pimiento just before serving.

 

Diabetic Strawberry Milkshake

Ingredients

  • ¾ cup strawberries
  • 1/3 cup skim milk
  • ½ cup unsweetened strawberry yogurt
  • 2 Equal packets

 

Instructions

Use a blender to mix together the milk, yogurt, and sweetener. After thoroughly combined, add the strawberries through the hole in the lid one at a time. Blend well, pour, and serve.
