Ingredients

  • 1/3 cup all-purpose flour
  • 1/3 cup whole-wheat flour
  • 1 ½ cups old fashioned rolled oats
  • 1 large egg, lightly beaten
  • 1 cup dried cherries
  • 6 tbsp. unsalted butter
  • 6 tbsp. Splenda brown sugar blend
  • 3 oz. bittersweet chocolate, coarsely chopped
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • ½ tsp. salt
  • Cooking spray

 

Instructions

Begin by preheating the oven to 350 degrees F. Lightly spoon the flours into dry measuring cups and level them with a knife. Then combine these flours in a large bowl and add the rolled oats, baking soda, and salt, stirring with a whisk. Next, melt the butter in a small saucepan at low heat. Remove from heat, add the brown sugar, and stir until smooth. Combine this mixture to the flour mixture and beat with a mixer at medium speed until it is well blended.

Add the cherries to the mixture, followed by the vanilla and egg. Beat the mixture until this is well combined as well, and then fold in the chocolate. Instructions

Begin by preheating the oven to 375 degrees F. and start sifting the flour, salt, soda and baking powder together. Next cream together the corn oil, peanut butter, egg, apple sauce, skim milk, liquid sweetener, and sugar substitute. Add the oatmeal, and beat the mixture. Slowly add the flour to create a batter. Coat 2 large cookie sheets with cooking spray. Roll the batter into ball 1 inch balls and place them on the cookie sheets 2 inches apart. Press each gently with the bottom of a glass to flatten lightly. Bake the cookies for 10 minutes or until the cookies become a golden brown. Allow them to cool before serving.
