Diabetic Birthday Cake Recipes

 

Diabetic German Chocolate Cake

Ingredients

  • 4 oz baking chocolate
  • 4 egg yolks
  • 4 egg whites, stiffly beaten
  • ½ cup butter
  • ½ cup boiling water
  • ½ cup granulated fructose
  • ½ cup granulated sugar replacement
  • 1 cup buttermilk
  • 2 tsp. vanilla extract
  • 1 tsp. baking soda
  • ½ tsp. salt

 

Instructions

Bring the water to a boil and melt the chocolate. Next cream the butter, the fructose, and the sugar replacement until the mixture is fluffy. Add one of the egg yolks at a time, beating well each time, and then blend in the vanilla and the chocolate water. Sift the flour baking soda, and salt together, and then alternate between adding this and the buttermilk to the chocolate mixture, beating well each time until the mixture is smooth. Fold in the beaten egg whites to finish.

Grease three baking pans (9”) and line them with paper. Grease again and lightly flour the pans. Pour the batter into each of the pans. Bake for 25 to 30 minutes at 350 degrees. Stick a toothpick in the center of the cake. If it comes out clean it is done. Remove from pans onto the racks, remove paper lining, and cool.

 

Quick Pineapple Cake

Ingredients

  • 1 angel food cake mix
  • 1 (20 oz) can crushed pineapple with juice

 

Instructions

To begin, preheat the oven to 350 degrees F and spray a 9×13” pan with a light cooking spray. Using a large bowl, combine the cake mix and pineapple with the juice. Mix the ingredients until they are well blended. Pour the batter into the pan and bake 350 degrees F for 25 minutes or until the cake is a golden brown. Let it cool and then cut into 12 pieces.
