Asparagus and Pimento with Toasted Pine Nuts

Ingredients

  • 1 pound fresh asparagus
  • ¼ cup diced pimento
  • 1 tbsp. toasted pine nuts
  • 1 tbsp. toasted pine nuts
  • 2 tbsp. fresh lime juice
  • 1 cup water

 

Instructions

Begin by rinsing the asparagus and snapping off the tough ends. Then, bring the water to a boil in a large skillet and add the asparagus. Cover and steam the asparagus for 2 or 3 minutes, until it is a bright green. Remove the pan from the heat, drain, and arrange the asparagus on a platter. Sprinkle this with the lime juice and garnish the dish with the pimento and pine nuts. This plate can be served chilled or warm.

 

Black Bean Dip

Ingredients

  • 1 can of black beans, undrained
  • 1 can (4 oz.) chopped green chiles, drained
  • 1/8 cup minced white onion
  • 1 clove garlic, minced
  • 2 drops Louisiana Hot Sauce
  • 1 pinch chili powder
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch ground cumin

 

Instructions

Drain all but 2 tbsp. of liquid from the beans. Pour the beans and liquid into a medium bowl. Add the chili powder, salt, black pepper, cumin and Louisiana hot sauce. Mix well and blend in a blender until smooth. Next, combine the onion and garlic in a hot skillet. Cover and allow the mixture to cook until the onion is soft. Uncover and cook until the mixture is browned and then add the chilies. Allow the mixture to cook for 3 more minutes, then add the bean mixture and mix well. This mixture can be served hot or cold.
