Instructions

In a large bowl, mix together the orange juice, lime juice, garlic, shallots, cumin, chili powder, and sugar. Allow the chicken breasts to marinate in this liquid for at least 2 hours. Put the remaining mixture in the refrigerator as well, to be used as dressing later.

Just before the 2 hours has passed, preheat an outdoor grill to medium-high heat. Lightly oil the grill and add the chicken, discarding the marinade. Allow the chicken to cook for 6 to 8 minutes on each side, or until the juices run clear when each piece is pierced. Remove from the grill, slice into thin pieces and set aside.

In a large serving bowl, toss the oranges, celery, green onions, and romaine lettuce. Add the remaining dressing and toss again to coat. Top the salad with the sliced chicken and serve.

 

Apple & Oat Muffins

Ingredients

  • 2 cups apples, peeled and shredded
  • 1 ½ cup all purpose white flour
  • 1 cup quick cooking rolled oats
  • 2/3 cup packed brown sugar, or Splenda brown sugar equivalent
  • ¼ cup fat free milk
  • 1 egg, large
  • 8 oz. low-fat plain yogurt
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • Cooking spray

 

Instructions

Preheat the oven to 400 degrees F, and then coat a muffin pan with cooking spray. Lay the apples on a paper towel and squeeze out the excess juice. Then, using a medium bowl, mix together the dry ingredients. In a separate bowl, mix together the egg, milk, yogurt, vanilla, and oil. Add this mixture to the dry mixture, stirring in gradually. Stir in the apples as well. Next, spoon the batter into the muffin pan, filling each cup 2/3 of the way full. Bake until the muffins are a golden brown (approx. 20 minutes), and then allow them to cool on a wire rack.
