When looking for a diabetic brownies recipe, be careful of the one you choose. There is a lot of misinformation out there, and you don’t want to find out it had too much sugar after you eat it. You also want to ensure that the recipe is not calling for margarine or other ingredients that are high in saturated ortrans fats. Some websites that you can trust to have truly healthy diabetic brownies recipes are:

  • DiabeticGourmet.com
  • Food.com
  • DiabeticLivingOnline.com
  • dLife.com

On the other hand, many people believe that when you become diabetic you must give up sweets completely. This is not true. In fact, when people are too restrictive in their diet they often end up frustrated and go on binges, states the American Diabetes Association (ADA) cookbook author Lara Roninelli, RD, CDE. Working with your diabetes educator is recommended when trying to learn how to fit desserts in you diabetic meal plan (WebMd.com, 2012).

Diabetic Brownies Recipe

Ingredients:

  • 3 tbsp. Stevia powder
  • 2/3 cup whole grain flour
  • 5 tbsp. canola oil
  • 4 tbsp. unsweetened cocoa powder
  • 6 tbsp. unsweetened baking powder
  • 4 egg whites
  • 1 tbs. vanilla extract
  • 1 oz. water
  • ½ tsp. salt

Instructions:

Pre-heat the oven to 375 degrees F. Next, mix the stevia powder, salt, oil, cocoa powder, and water in a large bowl. Now, use a microwave-safe bowl to heat the chocolate squares for one minute, or until melted. Be careful not to heat too long, or you’ll scorch the chocolate. Add the melted chocolate into the mixture mentioned above. Add egg whites, vanilla, and flour to the mixture and stir until the entire mixture is smooth.

Lightly spray a medium baking pan with cooking spray, and then pour the mixture into it, spreading it evenly with a spoon. Cook for about 18 minutes, checking frequently. After they are done, allow them to cool in the pan, and then cut them into 25 equal pieces.
