  • 2 cups of frozen raspberries, thawed and drained
  • 12 fresh berries
  • 1 tbsp. granulated sugar
  • ¾ cup Splenda or other artificial sugar equivalent
  • ¾ cup whole wheat pastry flour
  • ¾ cup cake flour
  • 2 large eggs
  • ¼ cup canola oil
  • ½ cup non-fat buttermilk
  • 1 tsp. vanilla extract
  • 1 tsp. freshly grated lemon zest
  • 1 ½ tsp. baking powder
  • ½ tsp. baking soda
  • ½
