The following recipe for diabetes cookies is just one of the treats that newly-diagnosed diabetics can look forward to including in their new diabetic diets.

 

Mocha Diabetes Cookies

 

Mocha cookies for diabetes are relatively easy to make. Their ingredients include half a cup of margarine, two teaspoons of vanilla essence, a third of a cup of liquid sugar substitute, two tablespoons of sugar, one and a quarter cups of flour, and three tablespoons of cocoa. They also include two teaspoons of instant coffee, one teaspoon of baking powder, a quarter cup of chopped walnuts, a quarter cup of raisins, and two egg whites.

Begin by preheating the oven to 375° Fahrenheit. Next, grease a cookie sheet and set it aside. In a bowl, mix the margarine and sugar together until is cream-like. Add the sugar substitute and vanilla essence to this, continuing to mix as you do so.

In a separate bowl, mix the coffee, cocoa, baking powder and flour together. Subsequently, pour this mixture into the first bowl, mixing everything together until the dough is even in consistency. Add the raisins and nuts, then mix the dough some more. Add the egg whites to the dough last, and continue mixing until they are completely absorbed.

The dough is now ready for baking. Drop tablespoonfuls of it onto the cookie sheet. Each time, make sure to moisten your fingers with water then use them to shape the dough drops into cookie shapes about a quarter of an inch thick. When you are done, put the tray into the oven and allow the cookies to bake for twelve minutes. At that point, their surfaces should spring back when you touch them.

Take the cookie tray out of the oven and transfer the cookies to a rack for cooling. When they have cooled, you may serve them. Remember to limit yourself to just one of these mocha diabetes cookies for desert. The idea of the diabetes diet is to manage the fat and sugar content of your food and eating many cookies, however low their fat and sugar content, simply will not allow you to do that.
